Whenever I make something that has vegetables, and the kids clean their plates, I take that as a win. This sausage soup may not be my favorite recipe. But you know what, the kids love it, it’s easy, and it’s inexpensive. I serve it over a little rice for the kids. This is an easy weeknight dinner for the family. Chop all your ingredients before you start cooking, or even the night before, and you can get this on the table even faster.

The Kids Love It Sausage Soup
Equipment
- 1 3 Qt Pot
Ingredients
Soup
- 3 tablespoons extra-virgin olive oil
- 2 cloves garlic minced
- 1 red onion diced
- 1 tablespoon paprika
- 3 tablespoons flour
- 12 ounces smoked kielbasa cut into bite size pieces
- 3 carrots peeled and chopped
- 1 pound red potatoes chopped*
- 1 tablespoon apple cider vinegar
- salt and pepper
Add ons
- 1/2 cup sour cream
- 2 tablespoons fresh parsley chopped
- 1 loaf bread for serving
- cooked rice optional**
Instructions
- Heat your soup pot over medium. Add the oil, onion, and garlic, cook stirring often for about 5 minutes take care not to burn them. Add the paprika and stir for a minute. Stir in the flour and quickly whisk in 4 cups of water.
- Add in the kielbasa, carrots, and potatoes. Season with salt and pepper and bring to a boil. After it comes to a boil reduce the heat to low, cover, and simmer for 20 minutes. Add the vinegar and check the seasoning to make sure it doesn’t need any more salt or pepper.
- While the soup is simmering mix the parsley and the sour cream with some salt and pepper.
- Ladle the soup into bowls, top with a dollop of sour cream and serve with bread.
