Mini Caprese Salad Bites

These Mini Caprese Salad Bites are perfect if you are looking for a quick, easy, and healthy appetizer. These bites are the perfect addition to any summer party or BBQ. This appetizer was a last-minute idea. The selection of cocktail skewers was limited at my grocery store. These would look so cute on some of the fancier picks.

I made the skewers the night before, placed them on the serving tray, covered them, and set them in the fridge. Wait until you are ready to serve to add the oil, salt, and pepper. Ciliegine fresh mozzarella is near all the fresh mozzarella in the specialty cheese section of your grocery store. It is a strange coincidence that the amount in a pint of tomatoes was almost identical to the number of pieces of cheese.

I did have a few leftover tomatoes, no big deal. You can use them up in this recipe Stuffed Cajun Chicken and Veggie Hash.

  • Rinse the cherry tomatoes and cut in half any that are extremely large or too big to be bite size. One at a time place 1 tomato, a piece of basil leaf, and a mozzarella ball on each skewer. Place them on a platter. When they are all filled and you are ready to serve drizzle with olive oil and sprinkle with salt and pepper.

  2. first of all these are so cute, love the little idea of having caprese salad as bite size perfect for get togethers, movie nights or when i get together with friends for a games night.
