Chicken Caesar Salad Bites

I served these Chicken Caesar Salad Bites at a summer pool party. I was trying to think of something besides the typical veggie tray for snacks. We served these Mini Caprese Salad Bites, so I had the extra cocktail skewers as well. These are a really easy, healthy, and inexpensive appetizer. Of all the food I served at the party, this was the first item gone.

Recipe Notes for Chicken Caesar Salad Bites

If you want to make this even easier, you could buy pre-cooked chicken in the refrigerated meat area. I had some uncooked breasts on hand, so I used those.

I made these the night before and drizzled the dressing on before serving; everything held up fine overnight. Make sure not to cut the cheese too small. If you do it, it will want to crumble when you put it on the skewer.

Chicken Caesar Salad Bites

A bite size version of a favorite salad.

Ingredients

  • 1 pound boneless skinless chicken breasts
  • olive oil
  • salt and pepper
  • 1 head romaine washed
  • 8 ounces romano cheese
  • ceasar dressing I used Marzetti simply dressed
  • cocktail skewers

Instructions

  • Season your chicken breast liberally with salt and pepper all over. Heat your skillet over medium high heat, add 1 tablespoon of oil and place the chicken in the skillet. Let this cook for about 6 minutes then flip them over. Cook for an additional 6 minutes or until the thickest part of the breast is 160°. Remove from the heat and let them rest while you prepare the rest of the ingredients.
  • After you wash the romaine cut it into bite size pieces. Cut the cheese into small chunks and when the chicken cools cut it into bite size pieces.
  • Now just skewer everything up. I did this order, lettuce, cheese, chicken. Place them on a platter and when you are ready to serve them drizzle with a little ceasar dressing. I took about 1/4 cup of dressing and thinned it with just a bit of water so it was a better drizzling consistency.
