These homemade crushed red peppers are something I make every year with fresh peppers from the garden. They are so flavorful and add wonderful fresh spice to your recipes all year long. I have used all kinds of peppers to make these, even mixed them up to have different blends. Some of my favorites are Cayenne, Jalapeno, Serrano, and Thai bird’s eye chili. The key to keeping them from spoiling is making sure they are completely dry and crispy before processing.
Drying Tips
You can go about drying them in a couple of different ways. You can use a dehydrator or string them up and let them dry naturally. I prefer stringing them up; it takes longer for them to dry, at least a month, maybe more. The dehydrator will get it done in a couple of days. The choice is yours.
- To dehydrate, I place the cleaned peppers in the trays, making sure they are not touching. Dehydrate for 24 to 48 hours. The peppers are done when they are brittle, snap easily, and feel dry.
- To string the peppers, I take a clean needle and thread or fishing line and pierce each pepper close to the stem and feed them through until I have a long string of peppers. I tie it and place it on a hook near my window, and leave it for a few months until they are dry and crispy. Make sure wherever you place them is a well-ventilated, dry area, in direct sunlight, until they become dry and brittle. If you dry them this way, give them a good rinse to get any dust off. Then let them dry on the counter overnight before processing.

Ingredients
- 20-100 hot peppers cayenne, jalapeno, serrano, habenero
Instructions
- Gather fresh chili peppers from the garden.
- Dry the peppers. You can do this a few ways. Use a dehydrator or string them up and let them dry naturally. See the tips above for more infor on how to dry them.
- After the peppers are dry break off the stems, discard stems, and add the peppers to a blender or food processor.
- Pulse the peppers until they are the size and texture you like.
- Add to a clean jar and store in a cool, dry place.
