Caprese Salad with Heirloom Tomatoes is one of the simplest yet most delicious dishes out there. It only takes minutes to throw together. The colors jump off the plate and are so beautiful. There is a catch, you HAVE to use fresh tomatoes when they are in season. There are only a few ingredients to this dish; make sure they are the best! This dish is perfect for late summer here in the Midwest. The tomatoes are at their peak, and the varieties are endless. This year, we have Better Boy, Mr. Stripey, and Cherokee Purple varieties.
I am very lucky to have some amazing friends who grow a large garden every year and are happy to share. I always tag the recipes that have been made with the fruits of their labor with #marburgergarden. This recipe serves double duty as a perfect starter to a summer meal or an easy side dish. Heirloom Caprese Salad
Equipment
Ingredients
- 4 large tomatoes Use any heirloom or fresh garden tomato
- 1 pound fresh mozzarella cheese
- few sprigs fresh basil
- olive oil
- balsamic vinegar
- salt and pepper
Instructions
- Slice tomatoes and cheese into slices around the same thickness. Shingle slices of the tomatoes and cheese on a platter alternating every other one. Break of leaves of the basil and tuck them in between some of the tomatoes and cheese.
- Drizzle with a little olive oil and balsamic vinegar. Season with salt and fresh cracked pepper.
