This Easy Broccoli Casserole is a healthier twist on one of my favorite holiday recipes. I always look forward to a broccoli casserole that my Stepmom makes for our Christmas dinner. It is stuffed with loads of yellow melted cheese and covered in butter crackers and more cheese. As much as I enjoy that rich casserole at Christmas, the recipe I have today is a lightened-up version. It is perfect for a weeknight dinner.
The cheeses used in this recipe have strong flavors, meaning you can use less and still get tons of flavor. While you wait for the water to come to a boil, get all your cheeses shredded and the rest of the ingredients in the mixing bowl. Then you are ready when the broccoli is done.

Easy Broccoli Casserole

Ingredients
- 1.5 pounds broccoli crowns florets trimmed off stem
- 1 clove garlic smashed
- 2 tablespoons extra-virgin olive oil
- 1/4 cup breadcrumbs
- 1/2 cup romano cheese grated
- 2 ounces sharp white cheddar cheese shredded
- salt
Instructions
- Preheat your oven to 450° and bring a pot of water to a boil. When the water is boiling add 1 tablespoon of salt, the smashed garlic clove and the broccoli florets. Boil for 2 to 3 minutes.
- Add the oil, romano cheese, half the breadcrumbs, a touch of salt and pepper to a large mixing bowl. Remove the broccoli from the boiling water with a slotted spoon and add to the bowl, mix.
- Place the mixture into a baking dish, cover with the remaining breadcrumbs and cheddar cheese. Bake for 15 to 20 minutes or until the cheese is just starting to turn golden.
