Cheesy Cauliflower Gratin

Simple ingredients come together in this cheesy Cauliflower Gratin. This cauliflower is an easy side dish that is perfect in the colder months served with any roasted meat or poultry. Omit the breadcrumbs to keep it low carb and keto. Or you can replace with a combination of grated parmesan and crushed pork rinds if you really want that crunch on top. For me, pork rinds are not my favorite, but you do you! This cheesy gratin is great accompanied by the Garlic Rosemary Beef Kabobs .

Cheesy Cauliflower Gratin

Ingredients

  • 16 ounce bag frozen cauliflower defrosted
  • 1/3 cup cream
  • 1/2 teaspoon dry mustard
  • 1 teaspoon salt
  • cracked peppper to taste
  • 2/3-1 cup gruyère cheese shredded
  • 1/4 cup panko breadcrumbs *optional* do not use for keto/low carb

Instructions

  • Preheat the oven to 350°
  • Mix together the cream, mustard, salt, and pepper. Place defrosted cauliflower in a baking dish and top with the cream mixture, then with the cheese and then if using the breadcrumbs. Bake at 350° for 35-40 minutes then turn on broiler for around 5 minutes to crisp up the top if necessary. Watch when it is under the broiler to ensure it does not burn.
