Easy Broccoli Casserole

This is a healthier version of my favorite holiday broccoli casserole

Ingredients

  • 1.5 pounds broccoli crowns florets trimmed off stem
  • 1 clove garlic smashed
  • 2 tablespoons extra-virgin olive oil
  • 1/4 cup breadcrumbs
  • 1/2 cup romano cheese grated
  • 2 ounces sharp white cheddar cheese shredded
  • salt

Instructions

  • Preheat your oven to 450° and bring a pot of water to a boil. When the water is boiling add 1 tablespoon of salt, the smashed garlic clove and the broccoli florets. Boil for 2 to 3 minutes.
  • Add the oil, romano cheese, half the breadcrumbs, a touch of salt and pepper to a large mixing bowl. Remove the broccoli from the boiling water with a slotted spoon and add to the bowl, mix.
  • Place the mixture into a baking dish, cover with the remaining breadcrumbs and cheddar cheese. Bake for 15 to 20 minutes or until the cheese is just starting to turn golden.
