A simple cobb salad is a pretty common option on restaurant menus. Luckily, they are so easy to make at home. If you prep your hard-boiled eggs and dressing ahead of time all you have to do is clean and chop the veggies while the bacon is cooking. I like to use a nice thick cut bacon for this salad. I cook the bacon in the oven. It cooks evenly and I do not have to babysit it while I am getting the other ingredients ready. Place a baking rack over a rimmed baking sheet and place the bacon in a single layer on the rack. My thick-cut bacon usually takes about 20-30 minutes at 375°. Once you have everything ready just top your lettuce with the ingredients and then put on your favorite dressing. I always use my homemade ranch but use whatever you prefer!

Simple Cobb Salad with Homemade Ranch
Ingredients
Salad
- 1 large head romaine lettuce cleaned and chopped
- 1 avocado peeled and diced
- 1 pound bacon cooked and chopped
- 2 plum tomatoes diced
- 4 hard boiled eggs diced
- 1 cucumber diced
- 4 ounces smoked blue cheese crumbled
- ranch dressing *
Dressing
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup liquid your choice of milk, water, buttermilk, cream, half and half ect.
- 2 teaspoons dry ranch mix Find recipe in link below.
Instructions
- Cook bacon, My preferred method is to place a rack on a rimmed baking sheet and lay the bacon on the rack and bake at 375° until crispy, 20-30 minutes for thick cut bacon.
- Prep hard boiled eggs. Bring to a boil, boil 5 minutes, turn off heat and cover, let sit for 10 minutes. Dump water and add ice cubes to chill for 10 minutes. Shake in pot and peel. For the full post on perfect hardboiled eggs check out the link below or in the post.
- You can make individual salads or one large platter, your choice. Start with the cleaned lettuce, then add the ingredients in columns down the plate. Avocado, bacon, tomato, eggs, cucumber, blue cheese. Top with desired dressing and enjoy!
There’s nothing like a good, hearty salad. I love all of the color and texture in this one. And baking bacon is so much easier (and less messy) than pan frying.
