The idea behind cook once eat twice is a way to have healthy dinners on the table even when life gets crazy. By cooking a larger amount of something one day you can roll the ingredients into another meal that you can have ready in minutes on one of the busy days. Cooking this way saves you time and money. It saves you time by having a healthy meal on the table in 15 minutes. It saves you money by not wasting or throwing away any ingredients and having a plan for all the items that you buy.
The oven-roasted brisket edition has you cooking it low and slow one day and serving it over a simple cauliflower mash (or mashed potatoes/buttered noodles for non-keto members of the household) then rolling into a flavorful taco the next day. This edition makes more meat then is needed for these two recipes. You have two options, You can take half of the brisket, sauce, and veggies from the first night and then freeze it for another week of meals that will be featured in Oven Braised Brisket #2. I have 2 more recipes coming soon on what to do with the rest of it. Or you can just eat the leftovers for the rest of the week. This is what you will need for both recipes, the grocery list is the fresh or specific ingredients you will need and the pantry items are things you probably already have in your kitchen if you are missing something from the pantry list make sure to add them to your grocery list!

Oven Braised Brisket
Leftover Brisket Tacos
Grocery List
- 1 5-6 pound raw beef brisket (not a corned beef)
- 3 onions
- 1 pound mushrooms
- 1 pound turnips
- 6 cloves garlic
- 2 cups dry red wine (or beef stock if you prefer)
- 1 sprig fresh rosemary
- Cauliflower rice or mash for keto meal or a noodle/potato mash for non keto people
- Chives *optional*
- 1 jar tomatillo salsa (you will need 1/2 cup, 4 oz)
- 2 poblano peppers
- 4 ounces cheese- either feta, queso fresco, or monterey jack
- 2 avocados
- shredded lettuce any variety will work.
- sour cream
- tortillas I use these and cut it into fourths for small tacos, if you are strict keto you will need to either serve it over the lettuce sans tortilla or make these.
Pantry Items
- salt
- pepper
- oil
Kitchen Items Needed
A large dutch oven or roasting dish, a large skillet, and a knife.
