Low Carb Jalapeno Cheese Dogs

My husband and I took one bite of these Low Carb Jalapeno Cheese Dogs and smiled. These are just so darn good. They remind me of being a kid again. Growing up, my mom would make us pigs in a blanket wrapped in crescent rolls with a slice of American cheese. I loved them growing up, and now I can love them again. The recipe makes 8 hot dogs if you are serving them for dinner. Another idea is to make them, let them cool a bit, then take a sharp knife and slice them into bite-sized pieces for party appetizers. I served this with a simple side salad for an easy weeknight meal.

When you are forming these, you have a few options. I like to dirty as few dishes as possible. Then flatten the dough out on the same mat I am going to bake them on. I take a square, fill and form it around the dog. Then lay the roll to the side until I have enough room for all of them. You could also use parchment paper. It’s up to you! Jalapeno Cheese Dogs

A low carb version of a childhood favorite

Ingredients

Dough

  • 1 1/2 cups mozzarella cheese shredded
  • 1 ounce cream cheese
  • 1/2 cup almond flour
  • 1 egg
  • 1/2 teaspoon baking powder

Cheese Dogs

  • 8 hot dogs
  • 3 slices american cheese split into thirds
  • 1/2 cup pickled jalapenos sliced rings or chopped
  • sprinkle sesame seeds optional

Instructions

  • Heat your oven to 400° Get a baking tray out and line with either parchment paper or a silicone mat.
  • In a microwave safe bowl add the mozzarella and the cream cheese. Microwave for 1 minute. Remove and stir well to combine the cheeses. Place back in and microwave it for 30 more seconds. Working quickly add the almond flour, baking powder, and the egg. Stir quickly to combine ingredients. Keep stirring until everything is combined and a dough is formed.
  • Dump this mixture in the middle of the parchment paper on the cookie sheet. Preferably near your sink because you will need to get your hands wet a few times to spread the dough. Wet your hands with water, working from the middle gently spread out the dough to be a rectangle. Add a touch more water to your hands if the dough becomes to sticky.
  • Use a pizza cutter to cut the dough into 8 rectangles big enough to just wrap around the hot dogs.
  • On each rectangle place 1/3 of a piece of cheese, a sprinkle of jalapeno, and the hot dog. Carefully wrap up the dog and seal the seam by gently pinching it together. Place seam side down on the tray. Repeat until all are rolled and placed on the lined baking tray again. If you desire you can sprinkle them with poppy or sesame seeds before placing in the oven.
  • Bake for 15-17 minutes remove from the oven and let them cool for a few minutes before cutting into them. This serves 4 people 2 dogs per person. Serve with a simple steamed veggie or salad.
