This Hydrating Blackberry Smoothie is one of my go-to post-workout snacks. I love the tropical feel and the hydrating power of coconut water to help replenish. You can use basil or mint, whichever you prefer. Try both and see which is your favorite. I do recommend having either your blackberries or pineapple frozen. It gives the smoothie a better texture. We harvest pounds of blackberries in the summer. I freeze them on a sheet tray then after they are frozen, bag them up and freeze them to use all year long.

Using an excellent high-powered blender such as a Vitamix makes blending the frozen fruit a breeze. This Hydrating Blackberry Smoothie is not the only thing you can use your blender for. Whip up this 15-minute shrimp curry for an easy weeknight meal!

Hydrating Blackberry Smoothie

Ingredients

  • 1 cup coconut water no added sugar variety
  • 1/2 lime juice from 1/2 lime
  • 3 ounces blackberries fresh or frozen (about 1 cup)
  • 3 ounces pineapple fresh or frozen (about 1 cup)
  • 1 teaspoon honey
  • 8-10 leaves basil or mint

Instructions

  • Using a blender such as Vitamix, add all ingredients, blend together until smooth, and enjoy
  • I recommend having at least one of the fruits frozen for the best texture and temperature.

    Coconut water in a smoothie, what a great idea! I can’t drink it straight but it’s delicious in this smoothie.

    Pineapple is a great balance to the less-sweet blackberries. Coconut water is such a refreshing base for this smoothie, and I can almost taste the mint now.
