Grilled pork chops and a simple salad make for a quick and easy weeknight meal. Making your own dressing is easy and you get to control all the ingredients and customize to your taste. You can either make the dressing right in the bowl that you will add the salad in or make a double batch and put in a container to use later in the week. If you are super pressed for time feel free to use a bottled balsamic vinaigrette, do what works for you! The only real cooking in this recipe is grilling the pork chops, besides that it is just throwing a few ingredients together for a delicious salad. While the pork is grilling go ahead and get the salad ready and you have a healthy dinner on the table in under 20 minutes!
A tip to save some money is to check the price on the whole pork loin as opposed to buying pre cut chops. When they are on sale the cost runs around $1.39/pound. Buy one and then just slice it into chops yourself to save some money. If you are not going to use the whole pork loin that week just place whatever you are not going to use in a freezer bag to use in week or two.
