Grilled Pork and Gorgonzola Salad

Grilled pork chops and a simple salad make for a quick and easy weeknight meal.  Making your own dressing is easy, you get to control all the ingredients and customize it to your taste. If you are pressed for time, feel free to use a bottled balsamic vinaigrette; do what works for you!  The only real cooking in this recipe is grilling the pork chops. Besides that, it is just throwing a few ingredients together for a delicious salad.  While the pork is grilling, go ahead and get the salad ready. Then you have a healthy dinner on the table in under 20 minutes!

A tip to save some money is to check the price on the whole pork loin as opposed to buying pre-cut chops. Buy one and then just slice it into chops yourself to save some money.  If you are not going to use the whole pork loin that week, place whatever you are not going to use in a freezer bag and freeze it for later.
