If you are pressed for time, feel free to use a bottled balsamic vinaigrette; do what works for you! The only real cooking in this recipe is grilling the pork chops. Besides that, it is just throwing a few ingredients together for a delicious salad. While the pork is grilling, go ahead and get the salad ready. Then you have a healthy dinner on the table in under 20 minutes!
A tip to save some money is to check the price on the whole pork loin as opposed to buying pre-cut chops. Buy one and then just slice it into chops yourself to save some money. If you are not going to use the whole pork loin that week, place whatever you are not going to use in a freezer bag and freeze it for later.

Grilled Pork and Gorgonzola Salad

Ingredients
Dressing
- 1 small shallot minced
- 2 tablespoons balsamic vinegar
- 1 teaspoon dried thyme
- 1/4 cup extra-virgin olive oil
- salt and pepper
Pork and Salad
- 4 5 ounce boneless pork chops
- 1 tablespoon extra-virgin olive oil
- salt and pepper
- 1 10 oz package mixed baby greens
- 1/2 cup red grapes halved
- 1/2 cup gorgonzola cheese crumbled
- 1/2 cup pine nuts
Instructions
Dressing
- Combine the shallot, vinegar, and thyme in a bowl large enough for the salad. Starting very slowly at first whisk in the oil until a dressing forms. Season with salt and pepper to taste.
Pork
- Preheat your grill or grill pan. Season the pork with salt and pepper and drizzle with the olive oil. Grill over medium high heat for about 5 minutes per side until cooked through. While the pork is cooking finish preparing the salad.
Salad
- In the same bowl you mixed the dressing in add the greens and mix to combine. Transfer to a large platter and top with the grapes, pine nuts, gorgonzola, and grilled pork.
