Combine the shallot, vinegar, and thyme in a bowl large enough for the salad. Starting very slowly at first whisk in the oil until a dressing forms. Season with salt and pepper to taste.
Pork
Preheat your grill or grill pan. Season the pork with salt and pepper and drizzle with the olive oil. Grill over medium high heat for about 5 minutes per side until cooked through. While the pork is cooking finish preparing the salad.
Salad
In the same bowl you mixed the dressing in add the greens and mix to combine. Transfer to a large platter and top with the grapes, pine nuts, gorgonzola, and grilled pork.
