Making your own dressing for this 5-minute coleslaw is almost as easy as opening up that jar from the store. You get to leave out all the added sugar and preservatives. The overall result is a tastier, healthier slaw. I use stevia as my sweetener, but use whatever you like. The idea is to give it a little sweetness to counter the tang from the vinegar. Having it chill in the fridge for an hour is essential to let all the flavors combine.

5 Minute Coleslaw
Equipment
Ingredients
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon whole grain mustard dijon or spicy brown could be used as well
- 1 teaspoon celery seed
- 1-2 tablespoons sweetener *your preference, I used stevia
- 4 stalks scallion diced
- 1 16 oz bag coleslaw mix *see notes
- salt and pepper
Instructions
- In a large bowl add the mayo. vinegar, mustard, celery seed, 1 tablespoon of sweetener and salt and pepper. Taste this and add more sweetener or salt and pepper to taste. Add the slaw and the green onions and mix well. Cover and chill for at least an hour up to overnight. Serve chilled as a side.
Notes
- Use the angel hair mix if you are not eating any carrots or just buy a small green cabbage and thinly slice it.
