Herb Chicken Pasta Salad

Ingredients

Dressing

Salad

  • 1 rotisserie chicken removed from the bones and shredded/chopped or 2-3 cups of leftover chicken
  • 2 stalks celery chopped
  • 1 cucumber sliced in half moons
  • 8 cups mixed greens 1 prewashed plastic container from the grocer

Instructions

  • Prepare your pasta according to the package instructions. Drain and rinse with cool water. While the pasta is cooking, make the dressing, and get your chicken ready by removing the meat from the bones and chopping it up.
  • Make the dressing. In a bowl large enough to hold all the chicken and pasta, add the yogurt, mayo, 2 tablespoons of water, vinegar, mustard, dill, chives, and 1 teaspoon of salt and whisk to combine.
  • Add the chicken, pasta, and celery to the dressing. Mix well. Serve this over a bed of mixed greens with some chopped up cucumber around it.
