Shaved Brussels Sprouts with Bacon

Thanksgiving month is here, let’s kick it off with this Shaved Brussels Sprouts with Bacon recipe! Thanksgiving feels like the official kick-off to the holiday season. The weather turns cold, families start planning festivities, and the best part of all…the food!

There are a few standard family recipes that we do not mess with at Thanksgiving like the stuffing, green bean casserole, and cranberry sauce. Everything else is up for grabs to get creative with. We always have some form of brussels sprouts, in past years we have roasted them with bacon and pan-seared them with bacon. Holding on to the love of all things bacon we tried it this past Tuesday shaved with bacon and came up with a winner. 

This will be the style we are serving for Thanksgiving at our house this year. I am hoping to get a few people converted to liking brussels sprouts because right now we are around a 50/50 on who likes then vs. hates them.  When you cook them like this they get very tender and have great bacon flavor running through them. We tested this as a side and these were 4 HUGE servings. It will easily feed 8 or more paired with all the other Thanksgiving side dishes. A few tips,

Tips for Shaved Brussels Sprouts with Bacon

  1. I shredded them with a shredder attachment for my kitchen aid mixer(easiest). In the past, I have just used a mandoline(still easy), or hand-cut them(just time-consuming) use whatever works for you. You can shred them in the morning and store them in the fridge until you are ready to use them.
  2. You need a large pan, at least a 12-inch skillet. If you do not have one split this into 2 batches to ensure brown crispy bits and no sad, soggy steamed sprouts.
  3. If the pan seems to dry after tossing the sprouts add in the second tablespoon of oil. It just depends on how much fat you get rendered out of your bacon.
  4. Don’t skimp on the salt and pepper, there are only 3 ingredients, make sure you season them!

Shaved Brussels Sprouts with Bacon

Ingredients

  • 1 1/2 pounds brussels sprouts shaved *
  • 4-6 slices bacon thick cut
  • 2 tablespoons olive oil
  • salt and pepper

Instructions

  • Dice up the bacon into small bites size pieces. In a large skillet add one tablespoon of oil and the bacon, cook over medium until the fat has rendered and the bacon is crisp. 3-5 minutes. Take care not to burn and adjust your heat accordingly. Have the sprouts ready to go.
  • Add in your sprouts and use tongs to toss and coat all of the sprouts in the oil and bacon, turn the heat up to high. After they are all coated in the oil and bacon let them sit in the pan for 2-3 minutes undisturbed. Then toss again with the tongs, add the remaining oil and let them cook for another 2-3 minutes. Season with salt and pepper and serve.

Notes

*You can do this a few ways buy them pre shredded, thinly slice then with a knife, use a box grater or mandoline to shred them, use the shredder on your food processor or kitchen aid attachment.
