Mexican Meatball Mania is a meal prep recipe in the “cook once eat twice” series. The idea behind cook once eat twice is a way to have healthy dinners on the table even when life gets crazy. By cooking a larger amount of something one day you can roll the ingredients into another meal that you can have ready in minutes on one of the busy days. Cooking this way saves you time and money. It saves you time by having a healthy meal on the table in 15 minutes. It saves you money by not wasting or throwing away any ingredients and having a plan for all the items that you buy.
Mexican Meatball Mania involves cooking the meatballs and pizza one night then rolling that over into a delicious salad the next. Make the meatballs and pizza the fist night then roll over the ingredients to the salad on the busy night. This is what you will need for both recipes, the grocery list is the fresh or specific ingredients you will need and the pantry items are things you probably already have in your kitchen, if you are missing something from the pantry list make sure to add them to your grocery list! - 1 pound ground pork
- 1 pound ground beef
- bunch of cilantro
- bunch of scallions (4 for the recipes and the rest chopped up in the meatballs)
- bulb of garlic
- 28 oz can tomatoes
- 4 oz can black olives
- 8 ounces pepperjack cheese
- large head of romaine lettuce or the 3 pack of hearts
- 8 ounce block of queso fresco
- 1 avocado (splurge and buy 2, one for each recipe if they are on sale!)
- sour cream
- Pizza crust *ingredients for fathead crust found here if making low carb/keto version
- dressing for salad *optional*
Pantry Items Needed
- almond flour/breadcrumbs
- eggs
- chili powder
- cumin
- salt/pepper
- oil
- hot sauce
