The Kids Love It Sausage Soup

Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 2 cloves garlic minced
  • 1 red onion diced
  • 1 tablespoon paprika
  • 3 tablespoons flour
  • 12 ounces smoked kielbasa cut into bite size pieces
  • 3 carrots peeled and chopped
  • 1 pound red potatoes chopped*
  • 1 tablespoon apple cider vinegar
  • 1/2 cup sour cream
  • 2 tablespoons fresh parsley chopped
  • salt and pepper
  • 1 loaf bread for serving
  • cooked rice optional**

Instructions

  • Heat your soup pot over medium. Add the oil, onion, and garlic, cook stirring often for about 5 minutes take care not to burn them. Add the paprika and stir for a minute. Stir in the flour and quickly whisk in 4 cups of water.
  • Add in the kielbasa, carrots, and potatoes. Season with salt and pepper and bring to a boil. After it comes to a boil reduce the heat to low, cover, and simmer for 20 minutes. Add the vinegar and check the seasoning to make sure it doesn't need any more salt or pepper.
  • While the soup is simmering mix the parsley and the sour cream with some salt and pepper.
  • Ladle the soup into bowls, top with a dollop of sour cream and serve with bread.

Notes

* You can use about a pound of regular potatoes if you have them, I just used red so I wouldn't have to peel them.
** the rice is optional, my kids like it that way
