Chorizo Sausage Gravy and Biscuits

- 1 tablespoon oil
- 1/2 pound fresh chorizo
- 3 cups whole milk
- 2 tablespoons flour
- 1 teaspoon salt
- cracked black pepper
- 8 biscuits
- 4-8 eggs
- chives optional for garnish
Prepare the biscuits according to package directions, Start these before you make the gravy.
In a large skillet over medium high heat add the oil and chorizo and break it up as you brown it for about 5 minutes. Make sure to cook it long enough brown it and get good color on it.
Add the flour to the sausage and stir to coat the meat, Slowly add 3 cups of milk, whisking as you add it. Bring this to a boil whisking constantly.
Reduce the heat to a simmer and simmer over low for about 15 minutes stirring often. Add the salt to taste and a hefty amount of black pepper, I did 10 grinds of my pepper mill.
As the gravy finishes prepare eggs to your liking, we like over easy. Then plate 2 sliced biscuits, gravy, and top with an egg or two. Enjoy!
