- 1 cup plain greek yogurt
- 1/2 cup mayonnaise
- 1 teaspoon apple cider vinegar
- 1 teaspoon dijon mustard
- 1 teaspoon dried dill
- 2-3 tablespoons chives chopped
- 8 ounces pasta half of a 1lb box, I used rotini
- 1 rotisserie chicken removed from the bones and shredded/chopped or 2-3 cups of leftover chicken
- 2 stalks celery chopped
- 1 cucumber sliced in half moons
- 8 cups mixed greens 1 prewashed plastic container from the grocer
Prepare your pasta according to the package instructions. Drain and rinse with cool water. While the pasta is cooking you can make the dressing so it is ready to go and get your chicken ready by removing the meat from the bones and chopping up.
In a bowl large enough to hold all the chicken and pasta add the yogurt, mayo, 2 tablespoons water, vinegar, mustard, dill, chives, and 1 teaspoon of salt and whisk to combine. Add the chicken, pasta, and celery to the dressing. Mix well. Serve this over a bed of mixed greens with some chopped up cucumber around it.
