Thai Peanut Zoodles

Ingredients

  • 2 meduim zucchini spiralized*
  • 1/4 cup plain roasted peanut butter nothing added, no sugar
  • 1 tablespoon red curry paste
  • 1 teaspoon rice vinegar
  • 1/2 lime
  • 1/4 cup cilantro chopped
  • 1 scallion chopped
  • 1/2 cucumber diced
  • crushed red pepper flakes optional
  • salt to taste
  • sriracha

Instructions

  • Heat 1/2 cup of water in a microwave safe glass for 1 minute. Get a bowl large enough to hold all the ingredients. Add the water, peanut butter, curry paste, vinegar, juice of half a lime, cilantro and 1/2 teaspoon of salt. Whisk this vigorously until it is well combined. Add the cucumber and the zoodles and toss in the sauce, Top with the green onion and red pepper flakes

Notes

*You need a spiralizer to make the zoodles.  I shared the link from Amazon above for the one that I currently have.
