Zucchini and Ham Zoodle Salad

- 1 tablespoon extra-virgin olive oil
- 1 small clove garlic
- pinch crushed red pepper flakes
- 2 ounces ham cubed or sliced thin into strips
- 1/2 medium tomato chopped
- 1 medium zucchini spiralized
- 1 ounce goat cheese feta cheese would work too
- 1 tablespoon fresh parsley optional
- coarse sea salt optional
Heat a skillet over medium and add the oil, garlic, red pepper flakes, and ham. Saute this for 2 minutes making sure the garlic does not burn. Add the tomatoes and saute for another 2 minutes. Add the zoodles, remove from the heat and add the cheese and parsley. Use tongs to mix it all together, top with some sea salt and enjoy!
