Chicken Ceasar Salad Bites

Ingredients

  • 1 pound boneless skinless chicken breasts
  • olive oil
  • salt and pepper
  • 1 head romaine washed
  • 8 ounces romano cheese
  • ceasar dressing I used Marzetti simply dressed
  • cocktail skewers

Instructions

  • Season your chicken breast liberally with salt and pepper all over. Heat your skillet over medium high heat, add 1 tablespoon of oil and place the chicken in the skillet. Let this cook for about 6 minutes then flip them over. Cook for an additional 6 minutes or until the thickest part of the breast is 160°. Remove from the heat and let them rest while you prepare the rest of the ingredients.
  • After you wash the romaine cut it into bite size pieces. Cut the cheese into small chunks and when the chicken cools cut it into bite size pieces.
  • Now just skewer everything up. I did this order, lettuce, cheese, chicken. Place them on a platter and when you are ready to serve them drizzle with a little ceasar dressing. I took about 1/4 cup of dressing and thinned it with just a bit of water so it was a better drizzling consistency.
