Servings: 40bites
Ingredients
1poundboneless skinless chicken breasts
olive oil
salt and pepper
1headromainewashed
8ouncesromano cheese
ceasar dressing I used Marzetti simply dressed
cocktail skewers
Instructions
Season your chicken breast liberally with salt and pepper all over. Heat your skillet over medium high heat, add 1 tablespoon of oil and place the chicken in the skillet. Let this cook for about 6 minutes then flip them over. Cook for an additional 6 minutes or until the thickest part of the breast is 160°. Remove from the heat and let them rest while you prepare the rest of the ingredients.
After you wash the romaine cut it into bite size pieces. Cut the cheese into small chunks and when the chicken cools cut it into bite size pieces.
Now just skewer everything up. I did this order, lettuce, cheese, chicken. Place them on a platter and when you are ready to serve them drizzle with a little ceasar dressing. I took about 1/4 cup of dressing and thinned it with just a bit of water so it was a better drizzling consistency.
