Shaved Brussels Sprouts with Bacon

Ingredients

  • 1 1/2 pounds brussels sprouts shaved *
  • 4-6 slices bacon thick cut
  • 2 tablespoons olive oil
  • salt and pepper

Instructions

  • Dice up the bacon into small bites size pieces. In a large skillet add one tablespoon of oil and the bacon, cook over medium until the fat has rendered and the bacon is crisp. 3-5 minutes. Take care not to burn and adjust your heat accordingly. Have the sprouts ready to go.
  • Add in your sprouts and use tongs to toss and coat all of the sprouts in the oil and bacon, turn the heat up to high. After they are all coated in the oil and bacon let them sit in the pan for 2-3 minutes undisturbed. Then toss again with the tongs, add the remaining oil and let them cook for another 2-3 minutes. Season with salt and pepper and serve.

Notes

*You can do this a few ways buy them pre shredded, thinly slice then with a knife, use a box grater or mandoline to shred them, use the shredder on your food processor or kitchen aid attachment.
