Toasted Garlic and Asiago Green Beans

Ingredients

  • 3 cloves garlic sliced thin
  • 1 pinch ground cayenne pepper
  • 2 tablespoons butter
  • 1 pound fresh green beans washed, ends trimmed, and cut in half
  • 1/3 cup water
  • salt and pepper
  • 2 ounces asiago shredded*

Instructions

  • Trim the ends of your green beans and cut them in half crosswise. In a large skillet slowly heat the butter over low. Add the garlic and the pinch of cayenne pepper. This is the most important part, you want to slowly toast the garlic but do not burn it. Let this simmer until the garlic is light golden brown then add your green beans.
  • Stir everything and cook this for another 2 minutes stirring the green beans around. Add a pinch of salt, you can add more later. Add the water and bring the heat up to meduim and let the water come to a simmer. Cover the pan and cook for 5 to 7 minutes.
  • Uncover the pan and continue cooking and stirring until all the water evaporates. Give the beans a taste and season with more salt and pepper as neccesarry. Top with the grated cheese while the beans are hot and serve.

Notes

*I use a microplane grater to grate the cheese right over the hot green beans. Check out the tip here for the easy minced garlic. The same technique applies to a block of cheese.
