Jamaican Beef Patty Skillet

Ingredients

  • 1 pound ground beef
  • 1 teaspoon oil
  • 1 yellow bell pepper diced, about 4oz
  • 1/4 red onion diced, about 2.5 oz
  • 2 scotch bonnet peppers minced, keep seeds in for extra heat, remove for less heat.
  • 1 1/2 teaspoons hot curry powder I use World Market brand
  • 1/2 teaspoon garlic powder
  • pinch ground cayenne pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 12 ounce bag cauliflower rice
  • 2 scallions chopped
  • salt

Instructions

  • In a large skillet heat the oil over medium-high, add the ground beef and saute while breaking it up for 5 minutes. Season with salt.
  • Add the yellow pepper, scotch bonnet peppers, and the onion. Saute this for 5 minutes stirring every so often. At any point if it feels like everything is getting too hot or has a chance of burning, turn your heat down.
  • Add the curry powder, garlic powder, cayenne, paprika, onion powder, and thyme. Saute this for 5 minutes stirring often. Add your cauliflower rice and stir to combine and heat through. Taste and season with more salt as needed. Top with the green onion and serve. You can top it with hot sauce and sour cream if you desire.
