What makes regular slaw even better? Bacon and blue cheese in the coleslaw! At “my” Kroger for some reason, the broccoli slaw in the salad department is always marked down on clearance. I guess not everyone loves the crunchy slaw mix as much as I do. I actually prefer it to traditional slaw mix in most recipes.
This creation came about by trying to make a slaw that my husband would like to go as a side with some steaks we planned on having that night. The bacon and blue cheese flavors seemed like a no-brainer to compliment the steak! It was a hit, he loved it. I think the slaw tastes the best right after making it because the bacon is still nice and crispy.T The leftovers the next day were fine but I preferred it day one. If you want to make it ahead for a party or meal planning I would say store the bacon separate until you are ready to serve. Mix it in at the last minute so the bacon does not get soggy.
If you do not have the pre-made broccoli slaw at your store you can save stalks from fresh broccoli and use a peeler or grater to shred them up. Use the florets for another side throughout the week!

Chicken, Swiss, and Slaw Sandwich
Triple B Slaw Bacon, Broccoli, and Blue Cheese
Ingredients
- 1/2 pound bacon diced
- 10 ounce package broccoli slaw buy premade or grate your own from broccoli stalks
- 1/2 cup mayonnaise
- 2 ounces blue cheese crumbled
- 1/2 teaspoon lemon juice
- 1/4 teaspoon worcestershire
- 2 green onions chopped
- 2 tablespoons red onion minced
- salt and pepper
Instructions
- Dice the bacon and fry up until crispy. Remove bacon to a paper towel lined plate to cool and make the dressing.
- Mix together mayo, blue cheese, green onion, parsley, worcestershire, lemon juice, and red onion. Toss with the broccoli slaw until well coated and then mix in the cooled bacon. Season with salt and pepper to taste. It depends on how salty your blue cheese and bacon are. Sometimes I omit the salt altogether. Serve immediately or chill for later.
