These Thai Peanut Zoodles are incredibly fast to make, delicious, and low carb! About a week into watching my carbs I was craving pasta so I decided to purchase a spiralizer to try this zoodle thing out. There are so many spiralizers out there. I wanted something simple and cheap since I was not even sure I would like them. This was my first attempt at making zoodles, and honestly, I was a little skeptical. In the ten minutes it took me to make this I quickly became a believer. Do they taste like noodles, no. Are they absolutely delicious in their own way, yes!
This is such a healthy way to indulge in your favorite sauces. In the days since making this recipe, I have come up with three more zoodle recipes. I’ll be sharing these over the next few weeks. I went with the minimalist approach to these, the less you cook them the better. In this recipe, you are just adding them to the sauce. I like this sauce served cold. But if you want to try it warm just add all the ingredients to a skillet and whisk until combined and toss the zoodles until they are just warmed through, like 30 seconds. If you cook them too long they will get mushy and water your sauce down, yuk.
As far as the actual spiralizer, under the photo, I shared the one that I currently have. For 2 people it is easy enough to use. If you are making them for a whole family I can see where you might want to purchase one that makes the zoodle process a bit quicker. Anyways, I hope you try these out and love them as much as I do. Thai Peanut Zoodles
Ingredients
- 2 meduim zucchini spiralized*
- 1/4 cup plain roasted peanut butter nothing added, no sugar
- 1 tablespoon red curry paste
- 1 teaspoon rice vinegar
- 1/2 lime
- 1/4 cup cilantro chopped
- 1 scallion chopped
- 1/2 cucumber diced
- crushed red pepper flakes optional
- salt to taste
- sriracha
Instructions
- Heat 1/2 cup of water in a microwave safe glass for 1 minute. Get a bowl large enough to hold all the ingredients. Add the water, peanut butter, curry paste, vinegar, juice of half a lime, cilantro and 1/2 teaspoon of salt. Whisk this vigorously until it is well combined. Add the cucumber and the zoodles and toss in the sauce, Top with the green onion and red pepper flakes
Zoodles are a thing I have not yet tried, but after seeing this combo I think that will soon change! I love a traditional peanut thai salad with chicken so this looks like a winner to me!
