Zucchini and Ham Zoodle Salad

Lunch around my house usually consists of clearing out bits and pieces of food not used in recipes and leftovers.  This Zucchini and Ham Zoodle Salad recipe came from doing just that.  This is an easy zoodle salad perfect for a lunch or light dinner. I had some goat cheese leftover from our wine and cheese night. Some deli ham,  and since I have a new love for zoodles I now always have zucchini in the fridge.  This recipe, start to finish took less than 10 minutes and I could not believe how delicious it was.  I think my next zoodle recipe will be something along the lines of an alfredo sauce. I have had a craving for that recently. As I said I made this for a quick lunch but I think it would be nice as a cold side dish for summer cookouts as well. For meals, I use 1 medium zucchini per person but for a side dish, I think I would use less, maybe 1 per every 2 people.  Have you embraced the zoodle trend yet? Zucchini and Ham Zoodle Salad

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 small clove garlic
  • pinch crushed red pepper flakes
  • 2 ounces ham cubed or sliced thin into strips
  • 1/2 medium tomato chopped
  • 1 medium zucchini spiralized
  • 1 ounce goat cheese feta cheese would work too
  • 1 tablespoon fresh parsley optional
  • coarse sea salt optional

Instructions

  • Heat a skillet over medium and add the oil, garlic, red pepper flakes, and ham. Saute this for 2 minutes making sure the garlic does not burn. Add the tomatoes and saute for another 2 minutes. Add the zoodles, remove from the heat and add the cheese and parsley. Use tongs to mix it all together, top with some sea salt and enjoy!

  2. I’ve been getting jealous of all those with the spiralizer!! I need to look for one here. Love the Zoodles! So much prettier. This looks delish.

  3. I love how easy this is to put together with all of those wonderful flavors! I have a spiralizer at home, but haven’t used it in a bit. Definitely need to pull it out again to try this.
