Dinner is on the table in no time with this easy ten minute veggie fried rice recipe. This fried “rice” is a great way to use up leftover ham from any holiday feast. You could also buy a ham steak or a chunk from your deli. I LOVE the organic riced cauliflower from Trader Joe’s. The texture is awesome and the price is always right. If you do not have a Trader Joe’s around you I am sorry, that stinks. I have seen the cauliflower rice in the freezer department at Kroger and Fresh Thyme as well. This dish would work just as well with leftover chicken or beef so get creative.
I can not stress enough to have all your ingredients prepped before you start. This cooks fast and you need to have everything ready to go, nobody wants burnt garlic because you were busy cutting the broccoli! Ten Minute Veggie Fried “Rice” with Ham (Low Carb)
Ingredients
- 1 tablespoon oil
- 1 1/2 cups ham cubed
- 3 1/4 teaspoons soy sauce sub coconut amino for keto
- 1 clove garlic
- 1 2 inch piece ginger peeled and diced
- 1/4 teaspoon crushed red pepper flakes
- 1 head broccoli florets removed and chopped
- 1/2 cup water
- 4 eggs
- 1/4 teaspoon sesame oil
- 12 ounce bag riced cauliflower
- spicy mustard or sriracha for serving
Instructions
- This recipe comes together very fast. Make sure you have all your ingredients cleaned, chopped, and ready to go before starting. Have a plate handy to place the cooked ham on.
- Heat a large skillet over high heat and add the oil and the ham. Let the ham brown for 2 minutes then add 1/4 teaspoon of soy sauce. Toss to coat then remove ham to the plate. Add the garlic, red pepper flakes, and ginger. Cook for 30 seconds then add broccoli and water.
- Simmer the broccoli over high heat until the water evaporates 4-5 minutes. Add the 3 teaspoons of soy and the ham, toss to combine, then push it all over to one side of the pan. Crack the eggs in the other side and quickly scramble them. When they are done mix it all together. Add the cauliflower and the sesame oil. Toss until heated through. Top with desired condiments.

Yum! Sounds totally delicious! One of my favorite things to do with big portions of leftover meat (like ham) is to repurpose them into other meals. Cook once, eat for days ;).
This is a great idea! I have made my own rice cauliflower, as well! That is super easy! I haven’t tried it to make fried rice, though! I love this! Totally giving it a try!
