Simple ingredients come together in this cheesy Cauliflower Gratin. This cauliflower is an easy side dish that is perfect in the colder months served with any roasted meat or poultry. Omit the breadcrumbs to keep it low carb and keto. Or you can replace with a combination of grated parmesan and crushed pork rinds if you really want that crunch on top. For me, pork rinds are not my favorite, but you do you! This cheesy gratin is great accompanied by the Garlic Rosemary Beef Kabobs .

Cauliflower is an underappreciated vegetable. I love finding new ways to prepare it. Thanks for a great recipe!
I love the cauliflower, especially beked or fried, but I have never add the chees to this vegetable. What a great idea. Thank you for the inspiration!
