Easy Breakfast Sandwich on the Best Keto Bread

Good Morning! Today I’m sharing an awesome recipe, Easy Breakfast Sandwich on the Best Keto Bread. I found and adapted this from Kasey Trenum at http://kaseytrenum.com . This recipe was discovered while browsing Pinterest and the title alone made me giggle. I had to save it to my *must try* board. You can find the original recipe here, the title is “90 second bread that actually tastes good”.

If you have ever experimented with low carb bread you know how GROSS some of them can be. Most of them taste like an overcooked egg. As a girl who likes scrambled eggs a bit runny this is absolutely the worst taste ever. I had pretty much given up on the quick bread but based on the title alone I had to try this one. She nailed it. It has no taste of overcooked egg, a very slight nuttiness from the coconut flour, and great texture. More importantly, it is the perfect device to cram a sandwich in my mouth! For those who are worried about the coconut flavor, my husband despises coconut and loves this bread for his breakfast sandwiches.

Eating a low carb lifestyle was not just about getting healthier and losing weight but it really makes you think about everything you put in your mouth. It is like re-learning to eat, yes it is true if you go back to a carb filled life after you lose the weight you will gain it all back, duh. Eating like that is how you got there in the first place! Can you enjoy the occasional slice of pizza and cake, sure! As long as you have the willpower to get right back on the train afterward.

It took me about 6 months of eating strict low carb to be able to indulge in something I wanted and then get right back to eating right.  Most processed and quick foods are loaded up with carbs and fillers. So, by eating low carb it forces you to eat clean by default and use real ingredients. My body can tell and it is happy with all the changes. Now If I could kick the wine habit… I could probably lose the last 15 that are still hanging around but hey, I am a work in progress!

Breakfast Sandwich on 90 Second Bread

Ingredients

Bread

  • 1 tablespoon butter melted
  • 1 tablespoon sour cream
  • 1 tablespoon cheese shredded I have used cheddar and mozzarella, both with success
  • 1 tablespoon coconut flour
  • 1 egg
  • 1/2 teaspoon baking powder
  • sprinkle garlic powder
  • butter for buttering and toasting bread

Sandwich

  • 1 recipe 90 Second Bread
  • 1 egg
  • 1 slice american cheese
  • 1 serving meat cooked bacon, sausage, salami, ham ect
  • mayo if desired
  • tomato if desired
  • lettuce if desired

Instructions

  • Melt butter in a round microwave safe dish.
  • Add the rest of the ingredients
  • mix well with a fork
  • Microwave for 90 seconds
  • loosen the edges from the side of the bowl with a knife and dump onto a cutting board. Let cool for 1 minutes then slice in half.
  • Very lightly butter each cut side of the bread and place it in a skillet over medium to toast. When brown flip and toast the other side just a bit. *EDIT* I have tried toasting it in a dry pan with no additional butter with excellent results as well. So choose the way that works best for you and your diet!
  • Fill with breakfast yummies
  • Enjoy

  2. I love a grilled cheese sandwich with my vegetable soup. Made 90 second bread grilled cheese with homemade Veggie soup for dinner tonight. This is by far the best bread option I have found. I used Almond flour (3 TBL) and also upped the butter to 1 1/2 TBL. Delicious…..this is a keeper

    1. I think you could, I’m not sure how long. I think the problem would be finding an oven safe bowl the right size to bake it in.Someone in a discussion said she buttered a skillet and cooked it like that browning on each side with success.

    1. You can but you need more, coconut flour is much more absorbant. I think you need 3 tablespoons, but not completely sure.

    1. You add up all your ingredients and subtract the fiber to get net carbs. The following is what I came up with, it is in the recipe notes! I came up with 2.6 net carbs/ serving. As brands differ in their nutritional content make sure to read your labels to determine your actual count.

  3. I used a small round glass bowl which worked quite well, no sticking involved either. This tasted pretty good! I need to add a bit of salt to it, and used Trader Joe’s “Everything But the Bagel” seasoning in the mix. Then I did the egg, ham and cheese muffin. It was delicious. Next time I’ll experiment with flax seed meal and coconut flour mixed together, as I love the taste of flax. Thank you so much for giving us quick bread!

    1. I have not, however someone on Facebook told me she makes 5 on Sunday and stores them in between parchment paper in the fridge for the week. When she wants to use ones he just removes it from the fridge and toasts it up before she uses it.

    1. I imagine you could, although it adds some moisture and flavor. Maybe you could sub a greek yogurt or a little mayo instead? I always have sour cream in the house so I have not tried to substitute it with anything else. If you try let me know how it turns out!

    1. It us a very old one that has been from home to home with me. It is 5 inches in diameter. It says “regal ware inc. Kewaskum, WI 53040 500 ml cook and serve” pan on the bottom.
