Garlic Green Beans

These Garlic Green Beans are a quick and easy side dish we usually eat once a week. Green beans are cheap, they range from .99 to 1.99/pound at my grocer. This makes them the perfect veggie for an easy side dish.  If you want to make this even faster you could take some help from the store and buy the trimmed beans packaged in a bag in the produce department.  You do pay extra for convenience but if you don’t feel like trimming the beans go for it.  To smash the garlic just take a clove with its skin on and literally give it a good smash with either your hand, a pan, cup, or I use the flat side of my knife. If you use the knife, please be careful.  The skin will come off and leave you with a hunk of garlic somewhat still together. This is what you want.  It gives the green beans the slight flavor of garlic without overpowering the whole dish.  I make mine in the larger skillet of this All-Clad set I got for Christmas.

Cooking Tips for Garlic Green Beans

One of the great things about cooking your own food is you get to make it how YOU like it. If you like really soft green beans boil them for 8 minutes. If you like them with a crunch only boil them 2 or 3. Oh, you hate garlic, try one clove or omit it altogether. If you love garlic then chop it all up and add it to give it a stronger flavor.  You get the idea, this recipe is just a method and the way we enjoy them. Garlic Green Beans

Ingredients

  • 1 1/2-2 pounds fresh green beans ends trimmed and cut in half
  • 2 cloves garlic smashed from skin
  • 1 tablespoon butter
  • 1 teaspoon salt
  • pepper to taste

Instructions

  • Fill a large skillet halfway with water, bring to a boil. Add the salt and the green beans. Simmer for 5 minutes.
  • Drain the water from the beans and return them to the pan over medium heat. Add the butter, garlic, and pepper. Saute this for long enough to melt the butter and coat all the beans, just a minute or two. You can cook them a few minutes longer if you want the beans to get a little brown. I make them both ways, just depends what kind of mood I am in. Season with additional salt to taste and enjoy!
