Garlic and Broccoli Breakfast Scramble

This Garlic and Broccoli Breakfast Scramble is one of my favorite quick breakfasts. It comes together in 5 minutes and is full of veggies and proteins to help keep you full until lunch. Keeping a bag of frozen broccoli handy lets you whip up this garlic and broccoli breakfast scramble in no time. To make this even tastier, I like to add a sprinkle of truffle salt to the top. That’s just me, you do you!

Garlic and Broccoli Breakfast Scramble

Ingredients

  • 5 ounces frozen chopped broccoli a little more than a cup
  • 1 clove garlic minced
  • 1 teaspoon olive oil
  • 2 large eggs
  • 1.5 ounces grated pecorino or parmesan cheese about 1/4 cup
  • pinch red pepper flakes
  • salt and pepper
  • truffle salt optional

Instructions

  • Over medium heat add the broccoli, minced garlic, and 2 tablespoons of water to the skillet, heat to a simmer until the broccoli is warm and the water is almost all evaporated (about 3 to 4 minutes).
  • reduce the heat to low, add the oil, and give it a stir, now add the eggs and mix all around with a spatula, mixing until the eggs are all cooked (about 1 minute).
  • Season with salt and pepper and red pepper flakes. Transfer to a bowl, and top with the grated cheese and truffle salt if using.

    This looks like a delicious way to start the day. I’ve never made scrambled eggs with veggies. I don’t know why I always make them the traditional way. Can’t wait to try this!
